fish Ingredients:
700 g red snapper (about 6 small fillets) |
115 g onions, chopped |
70 g mushrooms, sliced |
2 tbsp olive oil |
1 garlic clove, crushed |
4 leaves basil, rolled up and thinly sliced |
2 tbsp balsamic vinegar |
1/4 cup lemon juice |
Directions:
1. Preheat oven to 400 degrees. 2. In a frying pan heat up 1 Tbsp of the olive oil and saute the onions, mushrooms, garlic and basil over medium heat until the onions brown slightly. 3. Meanwhile, rinse, dry and place the fillets in a shallow baking dish. 4. In a bowl mix the other 1 Tbsp of olive oil, the lemon juice and the balsamic vinegar together and then pour evenly over the fillets. 5. Distribute the onion/mushroom mixture evenly over the tops of the fish and put dish in the oven. 6. Bake for 20-25 minutes or until fish is opaque and flaky all the way throug |
