Yummy Greek style baked potatoes with olives,feta and yogurt. Ingredients:
4 small russet potatoes |
1/3 c greek yogurt |
1/2 c feta cheese |
4 tsp. chopped pitted kalamata olives |
Directions:
1. Preheat oven to 450' 2. With a fork prick potatoes (2lbs total) in several places. 3. Place potatoes on a plate and microwave till tenderwhen pierced with a knife,7 to 10 mins. 4. Transfer to rimmed baking sheet and bake till skin is crisp,about 10 mins. 5. Halve potatoes. Dividing evenly,top halves with yogurt,feta and olives. Season with coarse salt and ground pepper. Sprinkle with fresh chopped chives. |
