Baked Potatoes Simply Become Salad |

The healthiest way to eat a potato is baked, skin and all, but in the summer you want a salad of it. My answer is this... Ingredients:
potato of choice |
olive oil |
butter |
lemon to squeeze |
sea salt |
fresh ground black pepper |
and ground sumac tastes great and looks good too |
fresh herbs |
sour cream or feta cheese |
optional slices of cherry tomatoes or sundried tomatoes or olives or... |
Directions:
1. Bake your potato 2. (or a whole bag - full) 3. refridgerate over night 4. cut in half 5. now, you will see the potato has a heart (aw!) 6. stick your thumb in the heart and the potato will easily split ino quarters. 7. drizzle with olive oil 8. salt and pepper to taste 9. chunks of butter if you love it 10. squeeze lemon juice over top 11. top with sour cream or feta cheese and sprinkling of fresh cut herbs. 12. garnish with optionals 13. sumac is my favorite part - sprinkled iver the potato and then over th sour cream and toppings too. |
