This can be either a side dish or an appetizer. This was originally from a diabetic cook book. We cut the pan into 9 as a side dish but you can easily make them smaller for appetizers. Ingredients:
3 cups mashed potatoes |
2 tablespoons flour |
1 1/2 teaspoons salt |
1/4 teaspoon black pepper |
1/2 cup sour cream |
2 tablespoons chives, chopped |
1 egg, slightly beaten |
1/2 cup swiss cheese, shredded |
4 slices bacon, cooked and crumbled |
Directions:
1. Preheat oven to 350º F. 2. Mix mashed potatoes, flour, salt and pepper. Spoon into a greased 9 X 9 baking dish. 3. Mix sour cream, chives, and egg. Spread over potato mixture. 4. Sprinkle with cheese and bacon. 5. Bake at 350º for 25-30 minutes or until set. 6. Cut into squares and serve. |
