Rich and Creamy Potato Soup. A favorite around the house. Throw the Potato in the oven when you get home and settle in. Then prepare this soup for a wonderful dinner. This makes a great winter meal for two. Ingredients:
1 large potato |
2 medium slices of bacon |
1/4 cup butter |
2 cups 2% milk |
4 tbs all-purpose flour |
1 cup vegetable broth |
1/4 cup low-fat plain yogurt |
1/4 cup green onions, chopped |
1 garlic clove, minced |
1/3 cup cheddar cheese |
1/2 tsp salt |
1/2 tsp pepper |
Directions:
1. Preheat oven to 400 degrees, place potato in oven for 40 minutes. Remove from oven and cube. Remove skin if you do not like the skin. 2. Cook bacon and drain and set aside. 3. In large pot melt butter 4. Add milk and whisk in Flour 5. Stir constantly until it thickens 6. Add all remaining ingredients except cheese. 7. Cook on medium-low to low, stirring occasionally for 20 minutes. 8. Mix in cheese or serve and garnish with cheese. |
