Great soup for a cold day, very very thick and creamy, i found it in a magazine long long ago and shared it with everyone i know. Ingredients:
2/3 cup butter or margarine |
2/3 cup all-purpose flour |
7 cups milk |
4 large potatoes, baked, cooled |
peeled and cubed |
(about 4 cups) |
4 green onions, slicled |
12 bacon strips, cooked and crumbled |
1&1/4 cups shredded chedder cheese |
1 cup (8 oz) sour cream |
3/4 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. In a large soup kettle or dutch oven, melt the butter. 2. Stir in flour; heat and stir until smooth. 3. Gradually add milk, stiring constantly untill thickend. 4. Add potatos and onions. 5. Bring to a boil, stiring constantly. 6. Reduce heat; simmer for ten (10) minutes. 7. Add remaining ingredients; stir until cheese it is melted. 8. Serve immediately. |
