A tasty baked potato soup recipe, top it with bacon, chives, cheese, and sour cream if desired! Ingredients:
2 1/2 lbs potatoes |
2/3 cup flour |
6 cups reduced fat milk |
3/4 cup reduced fat shredded cheddar cheese |
salt and pepper (to taste) |
1 cup reduced fat sour cream |
1/2 cup chopped green onions/chives |
Directions:
1. Bake potatoes until tender(approximately an hour at 400) 2. Remove skins from potatoes and mash to desired consistency 3. Place flour in large pot on stove 4. Stir in milk 5. Heat on medium for about 8 minutes until thickened and bubbly 6. Stir in potatoes and cheese until cheese is melted 7. Turn stove to low and stir in sour cream and chives 8. Let heat for 10 more minutes (do not allow to boil) 9. Garnish with toppings as desired |
