This is a very tasty and very comforting soup. I love this and always make plenty since it is popular. I normally sprinkle green onions, bacon and cheddar cheese over the top before serving. Yummers Ingredients:
2 russet potatoes |
1 yellow onion diced |
1 teaspoon salt |
1 teaspoon white pepper |
1 cup buttermilk |
1/2 cup heavy cream |
2 tablespoons butter |
2 chicken bouillon cubes |
1 cup water |
Directions:
1. Bake potatoes then remove skin and cube. 2. Place butter and onions in large pot and cook on low heat until they become soft and transparent. Do not burn the butter. 3. Add the milk and cream then bring to a boil. 4. Add bouillon then potato cubes. 5. Mix by hand with a paddle until soup thickens and lumps are gone. 6. Add water for consistency then bring to a boil for about 15 minutes. 7. Add salt and pepper. |
