2 (32 ounce) cartons chicken broth |
2 lbs yukon gold potatoes, chopped |
1 yellow onion, chopped |
1 pint heavy cream |
2 cups skim milk |
1 1/2 cups cheddar cheese |
1/2 cup nonfat sour cream |
1 lb bacon |
2 garlic cloves, minced |
3 tablespoons chives |
2 tablespoons butter |
1 tablespoon black pepper |
Directions:
1. Cook the bacon in a big stockpot and remove. 2. Drain most of the grease out of the pot (just leave a thin coating on the bottom). 3. Add in chopped onion & saute for a few minutes to soften. 4. Add in the potatoes and chicken broth. 5. Cook on medium to high heat for about 20 minutes or until the potatoes are tender. 6. Add the remaining ingredients and simmer for approximately another 20 minutes. |
