Warm and Hearty this soup is a wonderful start to a dinner or it can be a meal on it's own. This recipe can easily be doubled or tripled!!! Ingredients:
4 tablespoons butter |
1 medium onion, chopped |
2 tablespoons flour |
2 cups chicken broth |
1 1/2 lbs potatoes, peeled and diced to 1/2 inch |
1 teaspoon salt |
1/2 teaspoon pepper |
2 cups heavy cream or 2 cups milk |
1/2 cup cheddar cheese, shredded |
3 ounces bacon, crumbled |
1/2 cup sour cream |

1 ounce bacon, crumbled |
Directions:
1. Melt butter on medium heat in stock pot. 2. Add onion and saute for 2 minutes. 3. Sprinkle flour over the onions and cook 3-5 minutes, stirring often. 4. Gradually add chicken broth. 5. Add potatoes, salt, and pepper, bring to a boil, then simmer 20 minutes or until potatoes are tender. 6. Stir in heavy cream, 3 oz. bacon pieces and 1/2 Cup of cheddar cheese then heat through. 7. Garnish with cheese, sour cream and bacon. |
