Was looking through recipes in my notebook for something to make with chicken tenders and came across a baked version of potato skins..I've never had them let alone made them and have to say they came out pretty darn good. Ingredients:
4 potatoes, baked |
2 tbls. olive oil |
1 tbls. parmesan cheese, grated |
1/4 tsp. garlic powder |
salt and pepper to taste |
4 slices bacon, cooked and crumbled |
3/4 cup cheddar cheese, shredded |
1/4 cup sour cream |
2 tbls. chives or scallions, chopped |
Directions:
1. Preheat oven to 450 2. Cut potatoes in half lengthwise 3. Scoop out pulp, leaving a 1/4 in. shell 4. Place baking rack on lined baking sheet 5. In mixing bowl, combine oil, Parmesan cheese,garlic powder, salt and pepper 6. Brush over both sides of skins 7. Bake 6-8 minutes then turn over and bake for 6-8 minutes more. 8. Sprinkle bacon and cheddar cheese inside skins 9. Bake until cheese is melted 10. Top with sour cream and onions |
