I make this a lot as an appetizer and serve it with sour cream. It is different than most potato skins, but very good. Ingredients:
6 large potatoes |
4 tablespoons butter |
1 1/4 teaspoons pepper |
1/2 teaspoon onion salt |
1/2 teaspoon garlic salt |
1/4 teaspoon parmesan cheese |
sour cream |
Directions:
1. Scrub potatoes throughly, prick several times with a fork. 2. Bake at 400 for 1 hour, or until done. 3. Allow to cool to touch. 4. Cut potatoes in half lenthwise. 5. Carefully scoop out pulp, leaving about 1/4 inch thick shells. 6. Cut each shell lenthwise into 1 inch wide strips. 7. Place on ungreased baking sheet. 8. Brush tops of strips with butter. 9. Sprinkle with seasonings and cheese. 10. Bake at 400 for 10-12 minutes, or until crisp. 11. Serve warm with sour cream. |
