It has an unusual dressing and is soooooo good. Ingredients:
4.5lbs. red potatoes cut into bite-size chunks |
1/4c. olive oil |
2 envelopes italian salad dressing mix (i use good seasons zesty italian) |
1 med. green pepper; chopped |
1 med. red pepper; chopped |
1 bunch green onions; chopped |
2 large tomatoes; chopped |
4 hard-cooked eggs; chopped |
5 bacon strips; cooked & crumbled |
1& 1/2c. mayonnaise |
1t. vinegar |
1t. lemon juice |
2t. dried basil |
1t. salt |
1/2t. pepper |
1/4t. garlic powder |
Directions:
1. Toss potatoes with oil & dressing mixes. 2. Place potatoes onto a 15x11 baking sheet & bake 400F for 45 min. or until tender. (Do not let potatoes brown. You still want them pale, yet fork tender.) 3. Cool potatoes. 4. Transfer potatoes to a large bowl & add peppers, onions, tomatoes, eggs & bacon. Toss gently. 5. Combine remaining ingredients in a small bowl. 6. Pour over salad & mix gently. 7. Cover & refrigerate for at least 1 hour. |
