Baked Potato Salad

You'll never eat plain potato salad again. It says to cool, however, I like to serve it warm. Very good!
Ingredients:
5 lbs red potatoes, unpeeled and cubed
1 teaspoon salt
1/2 teaspoon pepper
6 eggs, hardboiled and chopped
1 lb bacon, cooked and crumbled
2 cups cheddar cheese, shredded
1 medium onion, chopped (optional)
1 1/2 cups sour cream
1 cup mayonnaise
2 teaspoons mustard
Directions:
1. Preheat oven to 425.
2. Place the potatoes in a greased 15x10 baking pan.
3. Sprinkle with salt and pepper.
4. Bake uncovered for 40-45 minutes or until tender.
5. Cool.
6. In large bowl, combine potatoes, eggs, bacon, cheese, and onions.
7. In small bowl combine sour cream, mayonnaise and mustard.
8. Pour over potato mixture and toss to coat.
