When baking potatoes, bake up a bunch and save the leftovers for this tasty potato cheese bacon casserole. Ingredients:
8 cooked, peeled and diced potatoes |
1 lb american cheese, sliced in strips |
1 cup mayo |
1/2 cup chopped onions |
salt and pepper to taste |
1/2 lb partically fried bacon, chopped |
1/4 cup sliced stuffed olives |
Directions:
1. Combine first 4 ingredients and season. 2. Put all in a 9 x 13 inch baking dish. 3. Top with bacon and olives. 4. Bake 1 hr. at 325 degrees. |
