Baked Potato and Bacon Soup |

Potato Soup Ingredients:
5 lbs potatoes |
7 slices turkey bacon |
4 1/2 cups onion, chopped |
5 cloves garlic |
7 1/2 cups skim milk |
3/4 tsp pepper |
3 cups fat free chicken broth |
1/3 cup parsley, chopped |
1 1/4 cups green onions |
1 1/4 cups reduced fat cheddar cheese |
Directions:
1. Preheat oven to 400 degrees. Pierce potatoes with fork and bake 1 hour or until tender. Partially mash the potatoes. Leave the skin on. Cook bacon until done. Crumble and set aside. In a large sauce pan, add the next 7 ingredients and potatoes. Bring to a boil and simmer 10 minutes. Top each bowl with bacon, green onion, and cheese. |
