I found this one while browsing for something new. The fact about being baked plantain caught my eye and decided to give it a try. It ended up being a keeper. This works great as a side for any type of rice and steamed veggies. Read more . In my particular case I made brown rice with almonds and steamed asparagus and it was a TRIUMPH !!! It is a very simple recipe and definitely worth the opportunity to try it. Take a look at the photos and enjoy !!!!! Ingredients:
4 plantains, ripe |
1/2 cup of apple juice |
1-2 tbsp. of molasses |
1 tsp. of cinnamon powder |
1/2 tsp. nutmeg powder |
1/2 tsp. ginger powder |
Directions:
1. Preheat oven at 350 degrees F. 2. Baked plantain can be eaten plain or served over a bed of brown rice or white rice. 3. Peel the ripe plantains and cut in half and split lengthwise. 4. Place them in a covered baking dish with the rounded side up. 5. In a measuring cup, mix together the apple juice, molasses, cinnamon, nutmeg and ginger, and pour over the plantains in the baking dish. 6. Bake for 30 - 45 minutes, or in a microwave oven (on high) for about 7. 10 - 15 minutes. The reason for the covered baking dish is to help steam the plantains and prevent them from drying out. 8. Baste as necessary to prevent the top of the plantains from drying out and to help give them a nice color. 9. Serve plain or over a bed of brown or basmati rice and enjoy! 10. NOTE- If you are serving baked plantains over rice as a main dish, I suggest serving with a large salad or steamed veggies. |
