Baked Pineapple With Brown Sugar And Kahlua |

I can't decide if this is better as a side dish or as a dessert. We love it and hope you do too. Yummers. Ingredients:
1/2 small pineapple peeled cored and cut lengthwise into 1/2 thick spears |
3 tablespoons brown sugar |
1-1/2 tablespoons butter |
1/4 teaspoon cinnamon |
3 tablespoons kahlua |
vanilla ice cream |
Directions:
1. Preheat oven to 400. 2. Arrange pineapple in single layer in baking dish then sprinkle with brown sugar. 3. Dot with butter and sprinkle with cinnamon. 4. Drizzle Kahlua over top then bake. 5. Bake until pineapple juices bubble 25 minutes. 6. If necessary transfer juices to small saucepan and boil until thickened to sauce consistency. 7. Arrange pineapple on plates and top with ice cream. 8. Spoon sauce over and serve hot. |
