So yummy and sweet, and good for the diet, too! From a recent issue of Gourmet. Ingredients:
1 large ripe pineapple |
3 tablespoons lime juice |
2 tablespoons tequila |
2 tablespoons sugar |
Directions:
1. Pre-heat oven to 425 degrees. 2. Pare off outside skin of pineapple, cut in half, top to bottom, even through the leaves. 3. Cut out the core. 4. Mix other ingredients well until sugar is dissolved. 5. Put pineapple flat side down in a glass baking dish. 6. Poke pineapple all over with a fork or skewer, then pour liquid mixture all over it. 7. Cover with wax paper and bake for about 50 minutes, basting every ten minutes with juices in the pan. 8. Cut each half in half lengthwise, and serve with pan juices on top. |
