Just my version of baked penne. This is great as leftovers, too. We usually have it with some steamed broccoli on the side. Ingredients:
2 chicken breasts, cooked |
8 ounces penne |
8 ounces pre-shredded mozzarella cheese |
1/4 cup capers |
2 (10 ounce) cans sliced mushrooms |
1 (24 ounce) jar spaghetti sauce |
Directions:
1. Cook the penne in salted water to your liking. 2. Cut the chicken into bite size pieces. 3. In a mixing bowl mix all the ingredients, but reserve some cheese for the top. 4. Note: put a little more spaghetti sauce in the dish than you like when you eat because some of the moisture will go away when cooking. 5. Put into baking dish or casserole pan and sprinkle reserved cheese on top. 6. Bake in 350 degree oven for 25-30 minutes or until bubbly. 7. Enjoy! 8. Note: You can mix everything together ahead of time, cover with seran wrap, and bake later. |
