BAKED PEAR CHEESE PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barker Estate in Tulsa, Oklahoma in 1982. Ingredients:
1/4 cup butter |
1/2 teaspoon salt |
4 eggs |
1 cup shredded white cheddar cheese |
1/2 teaspoon lemon juice |
1 cup all purpose flour |
1 cup milk |
2 medium pears thinly sliced |
powdered sugar |
Directions:
1. Preheat oven to 425 then heat butter in rectangular pan in oven until hot and bubbly. 2. Beat flour, milk, salt and eggs until well blended then pour into hot pan with melted butter. 3. Sprinkle with cheese then bake until sides of pancakes and puffed about 18 minutes. 4. Slice pears and pour lemon juice over to keep from turning brown. 5. Arrange pears over pancakes as desired then microwave 1 minutes to warm pears. 6. Sprinkle with powdered sugar and serve immediately. |
