This is from the T of H, Simple & Delicious magazine. This sounds good, haven't made it yet, but I am always looking for new fish recipes. Ingredients:
3/4 cup crushed corn flakes |
1/2 cup grated parmesan cheese |
1/2 teaspoon salt |
2 eggs, lightly beaten |
2 tablespoons milk |
2 lbs orange roughy fillets |
Directions:
1. in a large resealable plastic bag, combine cornflakes, Parmesan cheese and salt. 2. In a shallow bowl, combine eggs and milk. Dip fish fillers in egg mixture, then shake in cornflake mixture. 3. Transfer to a greased 15 inch X 10 inch x 1 inch baking pan. Bake at 450 degrees for 15 - 20 minutes or until fish flakes easily with a fork. |
