A tasty, crunchy potato to have along side a hot sandwhich. When you want french fries without the fat. Very satisfying and flavorful. Ingredients:
4 small potatoes, washed and unpeeled |
2 tablespoons vegetable oil |
4 tablespoons dry parmesan cheese |
1 teaspoon garlic salt |
1 teaspoon black pepper |
Directions:
1. Make ahead: Wash and dry 4 small potatoes. Leave skin on. Prick with a fork or knife and bake in the microwave until fork tender. After the potatoes are cool, cut into halves and then cut each half into thirds. Place potatoes in a plastic container. Add oil, garlic salt and pepper, cover with lid and toss until all pieces are well coated. Refrigerate until ready for use later in the day. 2. Pre heat oven to 425 degrees: Place the dried grated pamesan cheese in bowl (any jar brand will do) remove potatoes from container and toss in the cheese. Place on a cookie sheet making sure they have enough space to brown. Bake for 10 minutes turning once during that time. Potatoes will be brown and slightly crunchy. Serve right away. 6 pieces each.
