Found this little gem in a Nova Scotia cookbook. It is so easy and delightful as a side dish. Hope you enjoy. Ingredients:
2 lbs small onion, peeled (or cut large ones) |
1 cup light cream |
1/4 cup sherry wine |
1/2 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons butter |
1/2 cup sharp cheddar cheese, shredded |
Directions:
1. Cook onion in boiling, salted water until just tender. 2. Drain and arrange in shallow 1-1/2 quart baking dish. 3. Combine cream, sherry, salt and pepper. 4. Pour over onions; dot with butter and sprinkle with cheese. 5. Cover and bake at 350 degrees for approximately 20 minutes. |
