When the cool weather hits, I love having a bowl of this with swiss cheese melted over a slice of french bread. Ingredients:
6 tablespoons butter |
about 4 cups sliced (thin) sweet onions |
5-6 cans of swanson beef broth (or 2-3 large boxes, swanson) |
2 tablespoons white vinegar |
1/2 teaspoon salt |
1/2 teaspoon pepper (i use more because i like pepper) |
2 tablespoons flour |
small loaf french bread |
sliced swiss cheese |
Directions:
1. Melt butter in heavy stock pot. 2. Saute onions over medium-low heat until light brown, 10-12 minutes. 3. Sprinkle flour over onions, mix in slowly. 4. Stir in beef broth, vinegar, salt & pepper (the smell of the vinegar will disappear as it cooks). 5. Bring it to a boil, reduce the heat and simmer uncovered for 10-15 minutes. 6. Place your sliced bread in oven-safe bowls, ladel soup over bread & place a slice of cheese on top of bowl. 7. Bake until cheese melts, about 5 minutes (350 degrees). 8. Some like bread toasted first, up to you. If you have some leftover, it's better to heat up on stove first then just microwave it to melt your cheese. |
