Veggie Omelet (modified) from Hungry Girl Ingredients:
1 cup egg beaters |
1/4 cup milk, nonfat |
1/4 cup milk, fat free half & half |
1/2 cup cheese, 2% milk |
1 1/2 cups mushrooms, sliced |
3/4 cup green onions |
1/4 cup jalapeno |
1 cup green peppers |
1/2 cup tomatoes, sliced |
2 tbsp parmesan cheese, grated |
2 oz canadian bacon |
3/4 tsp garlic powder |
1/8 tsp black pepper |
1 tsp olive oil |
Directions:
1. Place all ingredients in bowl. 2. Mix well. 3. Pour into greased 8 x 8 baking dish. 4. Bake 30 minutes. 5. Bake additional 20 minutes until top puffed and firm. |
