Super easy yummy way to eat oatmeal. Great for new moms who may need a boost in supply. Do NOT eat if you have oversupply. Also great if you are not nursing. The fenugreek will give it a mapley flavor. I like pecans or walnuts as the mix in. Ingredients:
1/2 cup applesauce (or veggie oil) |
3/4 cup sugar |
2 eggs (preferably organic/free range for more omegas) |
1 cup milk (cow, goat, soy, rice, etc. can also use 1/2 yogurt 1/2 milk) |
1/2 teaspoon salt |
1 tablespoon baking powder |
3 cups regular oats |
1/2 cup walnuts, pecans or other mix-in (other nuts, dried fruit, etc) (optional) |
3 tablespoons (or 2-3 tea packets) fenugreek (optional) |
1-3 tablespoons milled flax seed (optional) |
1-2 tablespoons brown sugar |
1/2 teaspoon ground cinnamon |
Directions:
1. Beat together applesauce and sugar. 2. Mix in eggs, milk, salt, baking powder, oatmeal.Beat well then stir in nuts. 3. Pour into a lightly greased pie pan. 4. Sprinkle with brown sugar and cinnamon. 5. Refrigerate overnight. 6. The next morning, preheat oven to 350 degrees F (175 degrees C). 7. Bake in preheated oven until firm, about 35-45 minutes. Serve hot. 8. Cover leftovers (if any) and microwave individual servings for 20-35 seconds. |
