Hearty oatmeal you bake in the oven, really easy and makes a great breakfast and dish for guests. Whole grains make it healthier. Butter makes it taste good but can be made vegan. Ingredients:
2.5 cups thick cut oatmeal |
1/4 cup steel cut oatmeal |
1/4 cup oat bran |
2 tsp baking powder |
1/2 tsp salt |
1/2 tsp cinnamon |
2 cups milk |
1 egg, beaten |
1/4 cup butter, melted |
1 cup dried fruit (apples, blueberries, cranberries, raisins) |
1/4 cup chopped nuts (optional) |
1/4 cup unsweetened coconut (optional) |
Directions:
1. Preheat oven to 400 2. Combine dry ingredients in a bowl (oatmeal through cinnamon) 3. Combine wet ingredients (milk through butter) 4. Barely mix wet ingredients into dry ingredients 5. Place mix into a casserole dish and place in over for 20 minutes 6. After 20 minutes, remove dish from oven and mix in dried fruit (and nuts and/or coconut if using) 7. Bake for another 20 minutes 8. This tastes the best when served with milk! 9. Variations: replace milk with unsweetened soy milk and butter with oil for a vegan version. Add a 1/2 tsp of vanilla with the wet ingredients. Try cardamon or nutmeg with the cinnamon. |
