Baked Noodles and Eggplant |

I like to serve this with some steamed vegetables. Ingredients:
100 g noodles |
1 eggplant, chopped |
1/2 large onion |
1 garlic clove |
1 large tomato, chopped |
2 tablespoons tomato paste |
1/2 teaspoon ground cinnamon |
1/4 teaspoon grated nutmeg |
1/4 teaspoon cayenne pepper |
Directions:
1. Preheat the oven to 350F/180C/gas mark 4. 2. Cook the noodles in boiling water until tender. Drain. 3. Fry the onion and garlic until just soft then add the eggplant and tomato. Cook for another couple of minutes. 4. Add the tomato paste and a little water. Add the spices. 5. Simmer gently until it makes a thick sauce; about 15/20 minutes. 6. Mix the sauce and the noodles in a casserole dish and bake in the oven for about 30 minutes. |
