Baked Mediterranean Chicken |

The beauty of this dish is that it is all cooked in one pan. Serve with sweet potatoes if you wish: simply peel and chop into even pieces, toss in oil and roast for 40 mins. Ingredients:
4 boneless skinless chicken breasts |
9 ounces cherry tomatoes |
4 tablespoons capers |
4 tablespoons olive oil |
2 tablespoons balsamic vinegar |
12 black olives, pitted |
salt and black pepper |
Directions:
1. Heat the oven to 375°F. 2. Place the chicken and tomatoes in a roasting tin. Season wih plenty of black pepper, scatter over the capers, then add the olive oil and balsamic vinegar. 3. Place in the oven and cook for 20 mins, then add the olives and cook for a further 5 mins or until the chicken is cooked through. 4. Remove from the oven and serve on four warmed plates. |
