These are sort of like twiced baked potatoes, with less work involved. Ingredients:
2 lbs potatoes, peeled and quartered |
1/4 cup milk |
1/2 teaspoon salt |
1 tablespoon butter, melted |
1 egg, beaten |
1 cup low-fat sour cream |
1 cup low-fat small-curd cottage cheese |
5 green onions, finely chopped |
Directions:
1. Cook potatoes until tender; drain. 2. Place in a large bowl and add milk, salt, and butter; beat until light and fluffy. 3. Fold in egg, sour cream, cottage cheese, and onions. 4. Place in a greased 1 1/2 quart baking dish. 5. Bake, uncovered, at 350 degrees for 20-30 minutes. |
