This recipe is from a PBS telethon cooking show. This casserole is loaded with mashed potatoes, cheese, butter and hard salami, then baked till hot and cheesy! It sounds wonderful. I have not made this recipe, it is a recipe request. Ingredients:
6 -7 large potatoes, cooked and mashed until smooth and no lumps remain |
1/2 cup butter |
1/2 cup milk |
1/2 lb mozzarella cheese, cubed |
3 tablespoons grated romano cheese |
1/8 lb hard salami, minced |
salt and pepper |
1/2 cup breadcrumbs |
Directions:
1. To the warm mashed potatoes, add 6 tablespoons butter and all the milk. 2. Whip until smooth. 3. Add both cheeses and the salami. 4. Stir to blend. 5. Add salt and pepper to taste. 6. Use 1 tablespoon of the remaining butter to grease the bottom and sides of a tall sided casserole dish. 7. Coat the greased casserole with the bread crumbs. 8. Spoon the potato mixture into the casserole dish and, dot the top with the remaining tablespoon of butter. 9. Bake at 350°F until the top of casserole is golden brown (about 40-50 minutes). |
