BAKED MARMALADE PANCAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hood Estate in Malakoff, Texas in 1990. Ingredients:
2 eggs |
1/2 cup all purpose flour |
1/2 cup milk |
1/4 teaspoon almond or vanilla extract |
1/4 pound unsalted butter |
6 tablespoons orange marmalade |
2 tablespoons confectioners' sugar |
Directions:
1. Preheat oven to 400. 2. In medium bowl whisk eggs, flour, milk and almond extract until blended. 3. Melt butter in a large ovenproof skillet over moderate heat. 4. Remove skillet from heat and pour in batter tilting to cover bottom of pan evenly. 5. Immediately place in oven and bake 15 minutes. 6. Transfer to a serving plate then spread with marmalade and dust with sugar and serve. |
