Layered Pasta Casserloe
Ingredients:
8 ounces quinoa penne pasta
8 ounces turkey sausage
8 ounces lean ground beef
26 ounces spaghetti sauce
2 cups shredded mozzarella, divided
10 ounces spinach, thawed and squeezed dry
1 cup fat free ricotta
1/2 cup grated parmesan
1 egg
2 tbsp chopped basil
1 tsp salt
Directions:
1. Preheat oven to 350. Spray a 13X9 baking dish, with non-stick cooking spray.
2. Cook pasta according to directions, drain well, transfer to the prepared baking dish.
3. Brown sausage and ground beef in a large skillet over medium heat. Break up as you stir. Add pasta sauce; mix well. Add half of meat mixture to pasta and coat.
4. Combine 1 cup of the mozzarella cheese, spinach, ricotta, parmesan, basil, and salt in a medium bowl. Sppon small mounds of spinach cheese mixture over pasta mixture, and spread evenly. Top with remaining meat mixture; sprinkle remaining cup of mozzarella cheese. Bake 30 minutes or until bubbly.
