A delicious way to prepare chicken that any lemon pepper chicken seasoning doesn't come close to. Be aware: this recipe serves many. Ingredients:
54 ounces boneless skinless chicken breasts |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 thinly sliced garlic cloves or 1 teaspoon garlic powder |
1 teaspoon dried thyme |
2 1/2 cups thinly sliced onions |
1/4 cup lemon juice |
1 lemon |
1/4 cup chicken stock |
Directions:
1. Preheat oven to 400 degrees F. 2. Combine salt, pepper, garlic, and thyme. 3. Lay chicken pieces into a 11 x 13 baking pan. Sprinkle seasonings over chicken. 4. Combine onions, stock, and lemon juice in a sauce pan. Heat to a boil. 5. Pour hot lemon mixture around chicken. 6. Slice lemon into thin circular slices. Top chicken piece with a lemon slice. 7. Bake for 35 minutes at 400 F, until golden brown and juices are clear colored. |
