Got this one from a friend who uses lemons a lot in cooking. Very quick & easy to prepare.
Ingredients:
4 skinless chicken breasts
1/2 cup unsweetened plain yogurt
2 tablespoons lemon juice
2 teaspoons grated fresh lemon rind
1 tablespoon cornflour
1 teaspoon powdered turmeric
1 tablespoon finely chopped parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Directions:
1. Place the chicken breasts in an ovenproof dish. 2. Mix together the other ingredients and pour over the chicken breasts. 3. Turn to coat other side. 4. Bake at 180deg C for about 25-30 minutes or until chicken is cooked.
