Baked King Edwards Topped With Garlic Mushrooms |

Baked potatoes in their jackets make a delicious and healthy base for different meals. By adding different fillings the potato can be used again & again but with great variety. The King Edward is a classic type potato, perfect for this dish. Ingredients:
3 x 8oz king edward potatoes - suitably scrubbed |
1/2oz butter |
2 tbsp cream cheese |
3 cloves, crushed garlic |
8oz sliced mushrooms |
2 tbsp freshly chopped herbs (parsley, rosemary & thyme) |
a pinch of salt |
a few grinds of freshly ground black pepper |
Directions:
1. Scrub the potatoes and place in a pre-heated oven at approx 200°C. 2. Cook for 1 hour until cooked thoroughly. 3. When once the potatoes have been cooking for about 45 minutes, melt the butter in a saucepan, add the garlic and mushrooms and cook gently for 5 - 10 minutes. 4. Stir in the cream cheese & continue cooking for a minute. Add the herbs and season to taste. 5. After the potatoes are cooked cut them almost in half lengthways and spoon in the mushroom and garlic sauce. |
