I love spicy food and I love anything that is jerked. These are so good. I like them with either blackened chicken or salmon. Ingredients:
2 pounds potatoes well scrubbed and cut into 1 chunks |
1/4 cup vegetable oil |
1 tablespoon caribbean jerk seasoning |
1 teaspoon curry powder |
1 teaspoon garlic powder |
1/4 teaspoon ground allspice |
Directions:
1. Preheat oven to 425. 2. Place potato chunks in medium mixing bowl. 3. In a measuring cup stir together oil and spices then pour over potatoes and stir with a wooden spoon to coat all the potatoes. 4. Transfer potatoes to a rectangular baking dish and bake uncovered for 30 minutes stirring occasionally. |
