Baked Jerk Idaho Potatoes |

2 lbs idaho potatoes, well scrubbed and cut into 1-inch chunks |
1/4 cup vegetable oil |
1 tablespoon caribbean jerk seasoning |
1 teaspoon curry powder |
1 teaspoon cumin |
1 teaspoon garlic powder |
1/4 teaspoon ground allspice |
Directions:
1. 1. Preheat oven to 425°F Place potato chunks into a medium mixing bowl. 2. 2. In a liquids measuring cup, stir together the oil and spices. Pour spice mixture over the potatoes and stir with a wooden spoon to coat all the potatoes. Transfer the potatoes to a 13 x 9 baking pan. 3. 3. Bake, uncovered, stirring occasionally, for 30 min., or until potatoes are fork tender. |
