Excellent, easy, delicious, spicy side dish. Can be made ahead and baked just before serving. Ingredients:
2 large eggs |
16 oz. sour cream |
2 cups corn kernels |
1 (8 oz.) pkg. monterey jack cheese, cut into 1/2-inch cubes |
1/2 cup soft breadcrumbs |
1 (4.5 oz.) can chopped chiles, drained |
1/2 tsp. salt |
1/4 tsp. pepper |
1/2 cup (2 oz.) shredded cheddar cheese |
Directions:
1. Combine eggs and sour cream in a large bowl; stir in corn and next 5 ingredients. Pour into a greased 10-inch quiche dish or 2-quart baking dish. 2. Bake at 350 degrees for 40 minutes or until knife inserted in center comes out clean. Sprinkle with shredded Cheddar, and bake 5 - 10 more minutes. Let stand 10 minutes before serving. |
