Baked Italian-style Asparagus |

This is one of my favorites for a last minute dinner get together. This is a variation from a recipe I found in a Junior League cookbook from Tucson! Ingredients:
1 pound fresh asparagus, washed a trimmed |
1 red onion, thinly sliced |
4 tablespoons celery, chopped |
4 roma tomatoes, sliced |
kosher salt to taste |
ground black pepper to taste |
garlic powder to taste |
1/4 teaspoon oregano |
1/8 tespoon thyme |
1/4 cup panko bread crumbs (regular bread crumbs are great, too) |
1/4 cup asiago cheese, grated (or parmesan or romano if you prefer) |
3 tablepoons extra virgin olive oil |
Directions:
1. Place asparagus in a 9x13 oven-to-table baking pan 2. Top with onion, celery and tomato 3. Sprinkle with seasonings and cheese 4. Drizzle with olive oil 5. Cover and bake at 375 degrees for 45 minutes 6. Enjoy! |
