This is a fix and forget egg dish that bakes while giving you time to mingle with your guest. Serve for breakfast of brunch..... Ingredients:
10oz. pk. frozen chopped spinach, thawed |
8 beaten eggs |
1c. ricotta cheese |
1/2c. milk |
1/2tsp. dried basil, crushed |
1/4tsp. salt |
1/4tsp. fennel seed, crushed |
1/4c. chopped tomatoes |
1c. shredded mozzarella cheese |
1/2c. thinly sliced green onions |
1/2c. diced salami |
Directions:
1. Grease a 3 quart rectangular baking dish; set aside. Drain thawed spinach well, pressing out excess liquid; set aside. In a large bowl combine eggs and ricotta cheese; beat just until combined. Stir in milk, basil, salt, fennel seed, and pepper. Fold in spinach, tomatoes, mozzarella, green onions, and salami. 2. Spread mixture evenly into the prepared dish. Bake in a 325F oven for 30 minutes or until a knife inserted near center comes out clean. 3. Let stand for 10 minutes... |
