Typical of most other Smith Island recipes, this appetizer is about as simple as it gets. Ingredients:
1 dozen cherrystone clams |
crackers |
vinegar sauce or ketchup sauce |
Directions:
1. Wash clams in several waters and place on a cookie sheet. Preheat oven to 350 degrees. Put clams in the oven for 8 to10 minutes, or until shells just open. Remove from the oven and cut the muscle of each clam connecting the body with the top shell. Discard top shell. Also sever the muscle connectng the boy with the bottom shell, for easy eating.
