This is a colourful do ahead side dish. The carrots are really crisp when done. Kind of like hot raw carrots!! Ingredients:
3 cups carrots, grated |
2 tablespoons margarine, melted |
1 tablespoon lemon juice |
2 green onions, finely chopped |
2 tablespoons dry sherry or 2 tablespoons apple juice |
Directions:
1. Place carrots in casserole dish. 2. Pour margarine, lemon juice and sherry over carrots. 3. Sprinkle with green onions. 4. Bake at 350 for 30 minutes. |
