Baked Goat Cheese With Garden Salad

This is an incredible appetizer good enough to serve at casual or formal gatherings. Very creamy and very tasty. Enjoy
Ingredients:
4 slices fresh log chevre 1/2 thick
3 thyme sprigs
1/4 cup olive oil
1 cup fine dried bread crumbs
1 teaspoon dried thyme crushed
2 tablespoons red wine vinegar
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
3 cups mixed salad greens
1 day old baguette
1/2 cup butter melted
2 large garlic cloves split
Directions:
1. Place goat cheese rounds and fresh thyme in shallow pan or dish.
2. Sprinkle with 1/4 cup olive oil then marinate up to 1 day.
3. Mix bread crumbs and dried thyme then set aside.
4. Make dressing with 1/2 cup olive oil, vinegar, salt and pepper then set aside.
5. Slice baguette into 24 slices then brush each with some of the melted butter.
6. Place on baking sheet and bake at 350 for 7 minutes.
7. While still warm rub each crouton with cut clove of garlic.
8. Dip marinated cheese slices in bread crumbs then place in lightly oiled baking dish.
9. Bake at 400 for 6 minutes.
10. Toss salad greens with enough dressing to lightly coat.
11. Arrange on 4 salad plates then place cheese in center of plates browned side up.
12. Arrange croutons around cheese.
