Baked Gingerbread Pancake |

This is a great way to make pancakes. Very easy, very elegant and so full of flavors. I make them often because I love ginger, molasses and pancakes. This one has it all. Yummers. Ingredients:
1/2 cup milk |
1/2 cup all purpose flour |
2 tablespoons all purpose flour |
1/2 cup unsweetened applesauce |
1/2 cup egg substitute |
1 tablespoon dark molasses |
1 tablespoon granulated sugar |
1/4 teaspoon ground ginger |
1/4 teaspoon ground cinnamon |
1/4 teaspoon table salt |
1 cup lemon yogurt |
Directions:
1. Preheat oven to 425 then coat oven proof skillet with cooking spray. 2. Combine all ingredients together except yogurt and whisk until lump free. 3. Pour batter into skillet and bake until pancake is firm about 12 minutes. 4. Immediately remove pancake from oven and cut into wedges and top with yogurt. |
