Baked Garlic-Thyme Chicken |

Ingredients:
1/4 cup unsalted butter, softened |
2 scallions, chopped |
2 cloves garlic, minced |
1 teaspoon lemon juice |
1 teaspoon dried thyme leaves |
1 (3 1/2 lb) whole chicken, rinsed and patted dry |
Directions:
1. Preheat oven to 350°F. 2. Combine all ingredients, except chicken, in a bowl. 3. Season with salt and pepper to taste. 4. Spread seasoned butter over outside of chicken. 5. Place chicken, breast side down, in a baking dish. 6. Bake 35 minutes. 7. Turn chicken breast side up and bake another 25-35 minutes or until tender, basting occasionally with pan juices. |
