Baked Garlic Potato Casserole |

Serves 4 Ingredients:
2 large potatoes, sliced 1/4 inch thick |
2 tablespoons extra virgin olive oil |
2 tablespoons butter |
1 large onion, diced |
1 1/2 teaspoons garlic, minced |
2 teaspoons parsley, chopped |
Directions:
1. Preheat the over to 400 degrees. 2. Heat the oil and butter in a skillet. 3. Add the onions and cook until soft. 4. Add the garlic and cook for an additional 2 minutes. 5. Lightly oil a casserole disk and layer in the sliced potatoes. 6. Pour the mixture over the potatoes and baked, covered, for 1 hour. |
