Baked Flounder with Tomatoes Ingredients:
4 medium plum tomatoes, chopped |
1 teaspoon salt, divided |
1/4 teaspoon black pepper |
1 lb flounder fillets |
1/2 teaspoon dried oregano |
1 tablespoon olive oil |
1 tablespoon italian seasoned breadcrumbs |
Directions:
1. Preheat oven to 350 degrees Fahrenheit. 2. Coat a 7 x 11 baking dish with cooking spray. 3. Place tomatoes in bottom of prepared dish. 4. Sprinkle with 1/2 teaspoon salt and the pepper. 5. Place flounder evenly over top. 6. Sprinkle with remaining 1/2 teaspoon salt, oregano, oil, and bread crumbs. 7. Bake for 12 to 15 minutes. |
