May also be pan-fried using non-stick cooking spray to reduce cooking time. Ingredients:
2 lbs flounder or sole fillets (4 fillets, 8 oz. each) |
1/2 c grated parmesan cheese |
1 tsp dried basil |
1 tsp garlic powder |
1/8 tsp salt |
1/8 tsp black pepper |
1 egg, lightly beaten |
4 tsp olive oil |
8 lemon wedges |
Directions:
1. Preheat oven to 350 degrees F. 2. Place lightly beaten egg in a shallow pan. 3. Mix together parmesan cheese, dried basil, garlic powder, salt and pepper. 4. Dip fillet in egg mixture, then sprinkle both sides with parmesan mixture until lightly but completely covered. Repeat for each fillet. 5. Arrange fillets in a medium baking dish and sprinkle top with olive oil. Bake 30 minutes or until fish is easily flaked with a fork. 6. Serve with lemon wedges. |
